Superb Suppliers: The People That Keep You Fuelled While You Walk
After a long day immersed in Australia’s wild places, salt on your skin, dust on your boots, senses alive from the trail, you’ll arrive to our eco accommodation to the comforting aroma of a chef inspired meal already simmering, thoughtfully prepared and waiting for you, or, mid walk, our guides will produce one of the best sandwiches you’ll ever eat. It’s all part of the experience.
Every meal on a Tasmanian Walking Co. walk tells a story of place. From family-run oyster farms on Kangaroo Island to independent breweries in Launceston and small producers scattered from Tasmania to the Top End, we source as locally as possible, partnering with the people who know their landscapes best. So we wanted to shine a light on the passionate, independent suppliers behind our menus, whose produce brings each region to life, one unforgettable meal at a time.
Tasmania
Pigeon Whole Bakers
Few things are more comforting after a day on the trail than breaking warm bread, and in Tasmania, that ritual begins with Pigeon Whole Bakers. Founded in Hobart in 2011 with a simple dedication to baking fresh sourdough each day, PWB has grown from humble beginnings into one of the island’s most respected independent bakeries—without ever losing sight of craft, quality and care. From their Hobart pastry kitchen to purpose-built bakeries in Moonah and Devonport, their breads and baked goods are made by passionate people who believe great food starts with great ingredients and thoughtful hands. They like to say they’re the bread that feeds an island, and we don’t think they’re wrong! PWB brings a sense of home, heart and Tasmania itself to every table on our walks.

Du Cane Brewing
Based in Launceston, Du Cane Brewing is a supplier very close to our hearts, founded by one of our own Tasmanian Walking Co. guides. What began as a home-brewing passion inspired by long days exploring the Du Cane Range at Cradle Mountain has grown into Launceston’s first true brewpub. Every beer they craft reflects the rugged beauty of Tasmania’s wild landscapes and the relaxed, communal spirit of life in the north. On our walks, their beers are a highlight of the evenings, enjoyed after a day on the trail when boots come off, stories are shared, and the warmth of a good drink brings everyone together. Du Cane Brewing isn’t just about great Tasmanian beer; it’s about family, place, and celebrating the outdoors with every sip.

Wursthaus Kitchen
After a rewarding day on the trail — whether you’ve just finished the rugged terrain of the Tasman Peninsula or returned from a coastal walk — nothing hits the spot like quality meats around the dinner table, and that’s where Wursthaus Kitchen comes in. A beloved Hobart institution since 1985, Wursthaus Kitchen began as a local butcher and charcuterie devoted to handcrafted smallgoods and has grown into one of Tasmania’s most respected gourmet food producers and providores. From premium local hams, bacons and sausages to carefully selected meats sourced from the region’s best producers, Wursthaus brings exceptional flavour and craft to every cut they supply. On our walks, their meats feature in hearty shared dinners that celebrate the day’s adventure — rich, smoky and satisfying, they’re a delicious taste of Tasmania that brings everyone together around the table after a long day on the trail.

Tas Gourmet Sauce Co
For nearly three decades, Tasmanian Gourmet Sauce Co. has been turning the island’s rich seasonal harvest into a stunning range of sauces, mustards, chutneys and preserves — and they’ve been part of the Tasmanian Walking Co. story almost from the beginning. Founded by Julie and Tim Barbour in Evandale, this family‑owned and operated business champions the pristine flavours of Tasmanian produce, using locally grown fruits and vegetables in all their handcrafted products. On our walks, those jars of mustard and chutney aren’t just condiments on the table — they’re a taste of place, enriching shared meals after long days trekking through Tasmania’s forests and highlands. When we serve their products around the camp table, it’s more than flavour — it’s a reminder of the land we’ve walked and the passionate producers who help make every journey delicious.

South Australia
Kangaroo Island Oysters
After a day exploring Kangaroo Island's wild coastal trails, guests on our walks are treated to the freshest oysters imaginable, straight from the island’s pristine waters. Kangaroo Island Oysters is a long-established, professional aquaculture business, dedicated to producing high-quality Pacific and Angasi oysters that reflect the unique character of the island. On our walks, these ocean-fresh oysters are served with a little gin tipple, creating a moment that perfectly celebrates the day’s adventure. With a focus on sustainability, quality, and the local environment, Kangaroo Island Oysters brings the true taste of the island to the table — a briny, delicious reward after a day in the bush.

Gentle Folk Wine
After a day trekking Kangaroo Island’s rugged coastlines or traversing the dramatic ridges of the Larapinta Trail, there’s nothing like settling in with a glass of thoughtfully crafted local wine. Gentle Folk Wine, a small, family‑led winery in the Adelaide Hills, has been producing expressive, cool‑climate wines since 2013. Founders Gareth and Rainbo Belton cultivate their vineyards with care, creating small-batch Chardonnays, Pinot Noirs, and blends that reflect the unique character of the land. On our walks, sharing a bottle of Gentle Folk with fellow trekkers as the sun dips behind the hills or the red ranges becomes more than just a drink — it’s a way to celebrate the day’s journey, the landscapes we’ve explored, and the passionate producers who bring Australia’s wild flavours to our table.

Northern Territory
Du Yu Coffee Roasters
After early mornings and long days trekking the Larapinta Trail, there’s nothing like the ritual of a perfectly brewed coffee to kickstart or revive the senses — and that’s where DuYu Coffee Roasters shines. Based in Alice Springs, this family‑run roastery has been supplying freshly roasted beans across Central Australia for years, crafting blends and single origins that capture bold, rich flavours. On our walks, guests enjoy DuYu coffee at camp, whether as a morning pick-me-up before hitting the trail or as a warm, grounding cup after a day exploring the rugged Red Centre. Each sip celebrates not just the coffee, but the connection to place, the land we’ve walked, and the passionate local producers who make these journeys even more memorable.

Victoria
Otway Pasta Company
After a day wandering the windswept cliffs, coastal heath and ancient forests of the Twelve Apostles region, nothing brings everyone back together quite like a memorable meal — and at the heart of that spread is often pasta from the Otway Pasta Company. Based in the lush Otway hinterland, this family‑run producer celebrates handcrafted pasta made with care, simplicity and high‑quality local ingredients that reflect the fertile soils of the region. Whether it’s silky fettuccine, hearty gnocchi or seasonal shapes paired with garden‑fresh sauces, their pasta brings a taste of the Otways to the table and elevates our walk dinners into genuinely communal feasts. On our walks, sharing a plate of Otway Pasta after a day on the trail, with the coastline’s wind still in your hair and the smell of the sea on your boots, becomes one of those moments people remember: a perfect blend of place, produce and community.

Every walk with Tasmanian Walking Co. is a journey through Australia’s wild landscapes, and the flavours of each region bring those adventures to life.
